Mima Estates is located at the Southeast slope of the Baru Volcano, between 1600 and 2000 masl. It has a unique volcanic soil, where the winds of the Pacific and the Caribbean Ocean collide and where the climate is different from the rest of the country. Rola is a parcel named after the nickname of one the grandchildren of our founder, Eugene Altieri. This plot is surrounded by the woods of the Baru Volcano National Park, that is part of this farm.
This lot was hand-picked on February 17, 2022, after taken into consideration that it was properly mature. Then it underwent a cleaning and refloating selection in our coffee mill in Alto Lino, Boquete. Afterwards, the lot was placed in sealed tanks for 96 hours to undergo an anaerobic fermentation. Moreover, this fermentation process takes place in our controlled temperature warehouse of 18 º C.
The drying process was made in two phases. First, it was placed on African beds, exposed directly to the sun for 30 days and then placed under shadow to achieve a slower drying process. These two drying phases have been critical to achieve the intensity accomplished in this coffee.
Later, the coffee was placed in our controlled humidity and temperature warehouse for resting.
At the time of processing the coffee, it is grinded and undergoes an extensive process of selection, according to its size, density, and morphology. Finally, all our lots undergo a last manual selection done by our skilled labor.
